Winter meal

In a green colander over a striped bowl, a mixture of green and pink lentils are draining In a beige flat-bottomed bowl, a bed of orange and violet tagliatelles of steamed carrots runs between a ladle of lentils, bouquets of broccoli and a generous cream of chickpea in which is a spoon

Pink lentils, Thaï rice, tagliatelle of yellow and purple carrots, broccoli and hummus. This is seasonal and rustic.

Soaking legumes for 12 hours reduces cooking time and helps to better assimilate their nutrients, especially their proteins and all the calcium they are rich in.
